Simplified Pineapple Fried Rice For Two, version 1

Pineapple fried rice is a signature Thai dish, but is enjoyed by China and many South-East Asian countries. Traditional pineapple fried rice is cooked with small shrimps and red and green Thai chilies. They’re served in hollowed-out pineapple skin shells during special dining occasions and are often a conversation piece at the dining table.

For this recipe, dubbed as “version 1,” we will be omitting the shrimp and Thai chilies in lieu of a jalapeno chili for a quick turnaround but still retains the delicious taste of pineapple fried rice. This recipe yields enough rice for two, so simply double amount of the listed ingredients to double the serving size. We will revisit this recipe in the future to feature the traditional version using shrimp and Thai chilies.
