Since acquiring our Kamado Joe Classic II over two years ago, a lot has happened. We have a new member in the family, our first dog and first European Doberman. Our son was also diagnosed with provisional autism spectrum disorder (ASD) at 28 months, and then of course, the pandemic. Our son is doing well, he is getting all the support he needs and has progressed exponentially just in the past three months alone. We have a separate blog about him and his journey for parents who are also going through the same journey with their little ones. We have prepared a new recipe in time for our return, braised pork belly and eggs (thịt kho tàu) and will be sharing it with our readers soon. We have about 45 recipes backed up from two years ago and we are just getting started – for reals this time!
