Pata tim is a popular, delicious and very tender Filipino braised pork dish that is very similar to Chinese pork stew. The main meat in this recipe is pork but specifically the leg, shank or knuckles. The pork is traditionally boiled in a pot of water, soy sauce, vinegar, sugar and spice mixture for three hours until the pork is fall-off-the-bone tender. It is served with a medley of vegetables and a side of white rice.
This recipe takes the guess work out of preparation and uses a slow cooker to attain the same result, albeit longer, affording you time to do other errands. Simply prepare the sauce mixture in the slow cooker, then place the pork in it, set it and forget it for 8 hours.
